THE VAN HOUTEN LEGACY
In 1828, Casparus Van Houten invented the hydraulic cocoa press in Amsterdam. By separating cocoa butter from cocoa liquor, he made it possible to create cocoa powder that was smooth, consistent, and for the first time - affordable. Chocolate was no longer a luxury. It became a global pleasure.
But the innovation didn’t stop there. His son, Coenraad Van Houten, later developed the Dutching process; a method of alkalising cocoa that removed bitterness and gave cocoa its mellow taste and rich colour. That discovery didn’t just change hot chocolate. It paved the way for the invention of the modern chocolate bar and mass chocolate production as we know it.
